Crab Curry

Serves 2-4

INGREDIENTS

2 medium crabs
1 large onion - chopped
2 garlic cloves - sliced
A knob of ginger sliced - sliced
2 green chillies - sliced
2 sprig curry leaves - washed
1 bunch coriander leaves - washed and stems cut
1 x 400mltin coconut milk
1 tsp kosher salt

SPICES
1/2 tsp turmeric powder
2 tsp paprika powder
1/2 tsp chilli powder
Small cinnamon stick
2 tsp fish curry powder if you can get it or any curry powder
1/2 teaspoon of fenugreek seeds

METHOD

  1. Prepare all the ingredients
  2. Boil a large saucepan of water and submerge crabs for 5 minutes
  3. Remove crab from pan and remove shell, break legs and cut body in half.
  4. Put all the ingredients into a cast iron pan and place crab on top.
  5. Bring to boil, stir and simmer for 10-15 mins
  6. Serve with hot rice and garnish with a sprig of coriander.
