Stir fried beans with spices

A simple dish that's full of flavour!

This meal is gluten-free and dairy-free.

Note: frozen beans can be used, but I prefer using fresh as I like the crunch of fresh beans

INGREDIENTS

200g beans
1 red onion
1 fresh red chilli
2 sprigs curry leaves
1 tsp cumin
1 tsp turmeric
1/4 tsp chilli powder
100 ml coconut milk
4 tablespoons coconut oil

METHOD

  1. Wash and snap the beans by hand. 
  2. Slice onions and chilli.
  3. Heat oil and fry curry leaves for a few seconds, till fragrance is released.
  4. Add onions and fry till they go limp.
  5. Add beans, chilli, cumin, turmeric, chilli powder and coconut milk.
  6. Stir fry for a few mins.
  7. If you like your beans very soft, simmer for about 3 mins.
