For all my frostings I use Western Star unsalted butter at room temperature.

Easy Butter Icing

This is a simple frosting that’s easy and quickI use this as a base and add essences and flavours to create a variety of frostings. Butter icing is creamed.  This means that a fat is mixed with sugar to create a smooth texture. The beater of electric or hand held mixer is used.  

INGREDIENTS

500 g unsalted butter (18oz)
1kg pure icing sugar, sifted
120g or 1 cup of full cream milk powder
Water to thin down to desired consistency.
2 tsp vanilla extract

METHOD

  1. Beat the butter till its a smooth consistency on med.
  2. Turn mixer to lowest speed and add icing sugar slowly.
  3. when sugar is well incorporated, add milk powder.
  4. Scrape down the sides of the bowl.
  5. Turn beater to high and beat till icing is light and fluffy.
  6. Add water till desired consistency is reached.
