Lentil Curry

Everyone has their own method and recipe for this and no two lentil curries will taste the same... but here's mine. Note: This curry is gluten-free and dairy-free.

Everyone has their own method and recipe for this and no two lentil curries will taste the same... but here's mine. 

Note: This curry is gluten-free and dairy-free.

INGREDIENTS

100g red lentils
1 onion
1 green chilli
10cm piece of panda leaf
3cm piece of lemon grass
1 tsp of turmeric
400ml of coconut milk
Salt to taste
2 tablespoons of coconut oil

METHOD

  1. Wash lentils and leave aside.
  2. Slice onions, chilli, lemon grass and pandan leaf.
  3. Heat oil and fry onions, chilli, panda leaf and lemon grass till fragrant.
  4. Add turmeric and give it a stir.
  5. Now the lentils and coat with spices.
  6. cover with warm water and simmer till lentils are soft and change colour.
  7. Add coconut milk and bring to boil.
